Paya |
Paya is a scrumptious and filling
meat dish created from the feet of goat or lamb. It is a well-liked meal in
various South Asian and Middle Eastern cuisines. Here's a basic recipe for
preparing paya:
Ingredients
- 4 to 6 goat or lamb hooves (cleaned and divided lengthwise)
- 2 tablespoons oil or purified butter
- 2 onions (finely diced)
- 4 cloves of garlic (finely chopped)
- 1-inch piece of ginger (grated)
- 2 tomatoes (finely diced)
- 2 teaspoons red pepper powder
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 teaspoon garam masala powder
- Salt to taste Fresh coriander leaves (for garnish)
- Lemon wedges (for filling)
Instructions
- Completely cleanse the hooves by rubbing them under rushing water. Alternatively, you can request your butcher to clean them for you.
- Warm the oil or purified butter in a large, sturdy pot or pressure cooker over medium heat. Include diced onions and cook until they turn golden brown.
- Include minced cloves and finely grated ginger in the cooking dish and sauté for a minute until the aroma arises.
- Combine the diced tomatoes and cook until they soften and turn into a mushy consistency.
- Add in crimson chili powder, turmeric powder, coriander powder, and salt. Stir thoroughly and cook for a couple of minutes to allow the spices to release their flavors.
- Place the cleaned trotters in the pot and ensure they are well coated with the spice mixture. Cook for a few minutes, intermittently stirring.
- If utilizing a pressure cooker, add an ample amount of water to cover the trotters and seal the lid. Cook over medium heat for about 25-30 minutes or until the trotters become tender. If using a regular pot, add enough water to cover the trotters, bring it to a boiling point, then lower the heat to a gentle simmer for 2-3 hours until the trotters reach a tender texture. If the liquid evaporates too quickly, you may need to add additional water during the cooking process.
- Once the trotters are tender, sprinkle garam masala powder over them and mix well Cook for an extra 5 minutes to let the flavors meld jointly.
- Taste the dish and adjust the seasoning by adding more salt and spices to suit your preference.
- Enhance the presentation by garnishing with freshly chopped coriander leaves.
- Serve the paya while hot alongside naan bread or rice. For an extra tangy flavor, squeeze some lemon juice over the dish before consuming.
- Please note that the cooking time may vary depending on the love of the trotters and the chosen cooking method. Using a pressure cooker will considerably reduce the cooking time.
